I'm unsure if this has already been talked about or anything, but will the Anime Midwest event be postponed or anything because of this?

We really don't know yet. If the Coronavirus stops spreading, Anime Midwest will probably be happening. However, if Coronavirus continues to spread into May or June in Chicago, then they will most likely cancel it. In other words, hope for the best, but prepare for the worst.
